Online butcher’s shop Farmison & Co has added bricks to its clicks business model with the opening of a store, and more are likely to follow.
Farmison’s store, Cut, made its debut this month in Ripon, North Yorks - the area from which it sources much of its meat such as heritage breeds beef.
The retailer said the incorporation of a click-and-collect service makes it “the biggest virtual meat counter in the world”.
The store was envisaged to be “as much an experience as a shop”, and includes a glass wall to create in-store theatre by enabling shoppers to watch the master butcher at work.
There are in-store tastings, advice will be available on how to prepare meat as well as recipes from the retailer’s in-house Michelin starred chef, Jeff Baker.
Store aims to grow the concept of quality food retailers
Farmison founder and chief executive John Pallagi hopes that the shop showcases an opportunity “to grow the concept as a concession in high-quality food retailers in the UK and overseas”.
Pallagi said: “The profile of Yorkshire’s meat is only growing as chefs and home cooks recognise the rich heritage of traditional husbandry, with the pastures in the Dales and North York Moors giving the meat unique qualities – much like the principle of terroir in wine.”
Farmison was founded in 2011. It now employs approximately 100 people in Ripon and does business with about 30 farms in the north of England.
Former Asda boss and now Poundland-owner Pepco chief executive Andy Bond is among the investors.
